Zucchini and salmon rosti 10-2-13

With an abundance of zucchini from a colleague at work, I have been enjoying using them in a variety of ways.

Lunch today was no exception.

Usually I make this meal with lemon pepper tuna but looking in the pantry the fews days before payday I see salmon so that's the new rage .

Life and ingredients need to be versatile.


So here goes it trialing zucchini and salmon rosti....


2 zucchini
2 potatoes
1 egg
1 tin salmon 185g ish

Grate the zucchini and potatoe into a paper lined colander.Place more paper towels over top to absorb the justices. Repeat this with fresh paper towels until all the dampness has been removed.Leave to stand for few more minutes to get all the juices to drain out .

Drain the liquid from the salmon and mix with egg and grated vegetables.

Heat a dash of oil .

Cook 2-3 minutes.

Serve with fresh black pepper. Salad ....
