My neighbour gave me this recipe today so I thought why not make it?. It looks great especially for something that I forgot to put the egg in and pulled it out after four minutes . Ha Ha I wasn't concentrating .It tastes delicious. I made two put one in the freezer.
Gluten Free banana and date loaf
1 cup (135g) dates pitted and chopped finely
1/2 tspn baking soda
40g butter,diced
1/2 cup(125ml) boiling water
1/2 cup (110g) firmly packed brown sugar
1/2 cup (130g) mashed banana
1/2 cup (140g) greek style yoghurt
1 egg
1/2 tspn vanilla bean paste
1 1/2cups gluten free self raising flour,sifted
Preheat the oven 200 Celsius.180 fan forced. Grease 8 cm x 20 cm loaf tin.Line with baking paper.
Put dates,soda and butter into a large bowl and pour over boiling water.Stir to combine, then allow to sit for 5 minutes.
Stir sugar into date mixture. When sugar has dissolved, add banana, yoghurt,egg and vanilla bean paste. Stir to combine, then sift over flour.
Fold to combine,then spoon into prepared loaf tin. Bake 35-40 minutes.
Stand in pan for ten minutes before turning top side up, onto a wire rack to cool.
