Fried rice my style 7-1-13

Busy day today one way or the other. So helped by No.2 son doing all the vege prep, I set out to make fried rice.

One of the things I recommend to other coeliacs is freeze rice. I freeze rice frequently. I cook too much on purpose then I throw it in the freezer in snap lock bags.

Then on those nights like tonight, I reach for a couple bags of rice from the freezer and defrost in the microwave. All I had to do was cook the vegetables and chicken. I also snuck in a few prawns.

I use nice hot curry powder -empire brand.

It was very easy as No.2 son had diced carrots,celery,capsicum,onion,garlic, ginger opened tin of pineapple and wow that was tea.

Oh yes and gluten free soy sauce . Finished.

It's great for lunch at work the next day but with both No.1 and 2 at home no chance. Ha ha.
