Sultana Rice Salad Recipe 5-1-13
Sharing the lovely rice salad we had last night at the BBQ . This recipe was shared with me this summer and it is a hit. I use cut celery instead of peanut as we don't do nuts in our house, just gives it some crunch
Sultana Rice Salad
2 cups brown rice
1 cup unsalted peanuts
1 cup drained corn kernels
1 cup sultanas
3 spring onions finely sliced
1/4 cup parsley chopped
1 small red pepper , chopped finely
dressing
I Tbspn oil
I Tbspn curry powder
1 copped onion
1/4 cup white vinegar
1 tbspn sugar
extra 1/4 - 1/3 cup oil
1/2 tspn salt
Add rice to pot of boiling water , boil uncovered for 30 minutes or until just tender. Drain well under cold water.
Dressing
Heat oil in a pan, add onion, cook stirring until onion is soft add curry powder.
Cook stirring for 1 minute, cool. Combine onion mixture with other ingredients in bowl . Mix well.
Combine rice, sultanas, peanuts, spring onions , corn , parsley and red pepper in serving bowl. Pour dressing over salad, toss well. Refrigerate, covered for 1 hour before serving.
