Although it was a work day there was much preparation to be had in the staff room at work.One thing my Team does well is food. So the skewers were threaded one lot with the lovely marinated chicken one lot with vegetables. The rice salad was put together I made the dressing last night so that I knew it was gluten free. Many hands made light work.
I thought last night that I had all these left over meringues I made for Xmas and I recently looked at Alison Holstein gluten free dessert book. Remembering there was a recipe for berry meringue cream usually done in individual glasses I thought it would be great way to use them up. Kill two birds with one stone so I put that together . Easy as I will share recipe tomorrow.
So eager with anticipation, happy that all the cooking in BBQ is GF and salads are. it's easy if you are part of the organising team for these events . As I can pop my sauces etc in the flavour is no different really just a few tweaks and it should be a great night.
Like the meringues!! my friend Sue Atkinson is related to Alison and Simon Holst and has Xmas there every year. Her pics are amazing, the latest thing in the Holst household is the outdoor cooking oven apparently. I saw some cheap ones at Mega Mitre ten <$200! It occurred to me that if one has to have limitations on their food one should have all the fun gadgets because food is more than just food, there is a social component. Things like kebab sticks, fondue sets and other novelties multiply the enjoyment factor.
