Lentil Salad Recipe 6-1-13

Lentil Salad

this is the one from last night.It definitely got the Whanau tick.

2 tspns olive oil
6 spring onions.sliced
1 stalk celery,finelt diced
1 tspn cumin seeds
1 cup red lentils, rinsed
1 lemon, 1/4 cup juice
1 1/2 cups liquid chicken stock
1/4 cup currants
3 courgettes, grated
1/2 cup fresh coriander , chopped

method
Heat half the oil in a large frying pan. Add spring onion and celery.Cook over low heat for 5 minutes or until soft. Add cumin . Cook for 1 minute .Add lentils and cook until lemon juice evaporates.
Add stock and currants.Bring to the boil then reduce heat to low and simmer uncovered for 10 - 15 minutes or until all the liquid is absorbed.Cool, then fold through courgettes and coriander.
