The blogger returns

There is no point starting a blog and then stopping. I have a thousand excuses from fighting with building companies and insurance companies about the loss of our property in the Christchurch Earthquakes . The ultimate in excuses -we have moved to Auckland .

Now we are here I need to get back on track .

We have been staying with some of our special friends . We all joke about flatting in our fifties !!!!
My friend has known me since I was 6 and has been very understanding and encouraging when I found out I was a Coeliac.
She had been adjusting her beautiful breakfasts and making them gluten free .
We have had fun. The first Saturday experience was nearly in the sink . I had risen a little after 8 and by the time I got to the kitchen she had a load of gloop in a mixing jug . Poor thing  had realised that she was using bread mix instead of baking mix to make waffles . She was going to tip it out but we added more rice milk and we made it into fantastic pancakes .

The next weekend we did have splendid heart shaped waffles . She has a waffle maker or press not sure what they are called . I also put one I the freezer to see if that worked and the and it did .

Feast fit for the Queen

Living with others when you are gluten free can be as hard or as easy as you want to make it .
Most nights we only cook one evening meal .
