Meals planned for the week

I am trying to be organised. Things have been a bit chaotic over the last couple of weeks, my dear hubbie had a little stint in hospital and then has been all over the show with pain so I need to get life back on track where I can.

I am definitley  a better cook than nurse that's for sure .

The Meal plan for the week give or take what days these happen. The recipes will follow on the day with the photos . Well that's the plan .

Chicken and basil stir fry
Stuffed egg plant
Chicken paella
Pork and silver beet curry
Spiced chicken, lentil and pumpkin salad
Meatless Monday - Thai pumpkin and chickpea curry

I can't wait to sample these little wonders . I have not made any of them before so it will be a fun week.
I might even get buy in from one of my male Chefs to help me out .


Valentines Day - To die for chocolate brownie




This recipe happens to be one of the most different  things I have made . I think my message would be don't knock it until you have tried it. If you did a blind tasting with your family and friends, not letting them know what is in the recipe they would never ever pick it.
SCRUMPTIOUS  ( family favourite)


Chocolate brownie
400 g tinned red kidney beans or black beans well rinsed and drained
3 Tbspn apple purée
3 eggs
1/2 C cocoa GF
1 & 1/2 tsp baking powder GF
1/3 C raw sugar
1 tsp vanilla essence
40g chocolate chips GF

Blend all ingredients together in a food processor until very smooth, spread into tin, sprinkle with chocolate chips and bake at 180C for 20 minutes. 
It creates a rich fudge brownie.
The genius part is that you can't detect the beans.
